Same as using a joystick for anything else: install it, and map the joystick buttons to Wiimote/GameCube pad buttons in dolphin.
OS: Windows 10 64 bit Professional
CPU: AMD Ryzen 5900X
RAM: 16GB
GPU: Radeon Vega 56

Update the driver for the joystick.

The driver bundled with the joystick is usually outdated. (same with other hardware, such as WLAN cards etc.)

yeah, work with SNESS and N64 emulators, but didn't work on Dolphin =(

there is no such thing as drivers on mac (or there it is? but i think not, i didn't have to install any drivers to play the others emulators)

Yes there is, it's just done in a different way to windows. You can't expect it to know how to use something if it doesn't know what it is, what it does, or how to 'talk' to it. I don't know exactly how they work (they may all be built in to OSX, or may be fetched by OSX from an online repository and installed automatically).
