How to use a USB Joystick on MAC OS X

Same as using a joystick for anything else: install it, and map the joystick buttons to Wiimote/GameCube pad buttons in dolphin.

Update the driver for the joystick.

yeah, work with SNESS and N64 emulators, but didn't work on Dolphin =(

Yes there is, it's just done in a different way to windows. You can't expect it to know how to use something if it doesn't know what it is, what it does, or how to 'talk' to it. I don't know exactly how they work (they may all be built in to OSX, or may be fetched by OSX from an online repository and installed automatically).
