How do I smooth out the image of games? I've tried adjusting the internal resolution, to no avail. I'd like it to look as good as it does on my old TV when I use my component cable, if possible. If nothing else, I just really don't want to have to deal with all these ugly jaggies.

What's your monitor's size and resolution ?

Some GC games are very demanding. Metroid Prime is one of them. FFCC isn't really demanding. Wii games are demanding of course but some of them are very "light" compared to some GC games. But development versions have a lot of improvements and such so you should try them too. Some games work better with latest builds
