For Wii games: Place it in User/Wii/title/00010000

For Gamecube games: use Memory Card Manager (Tools -> Memory Card Manager)

Reading that makes something oh so obvious.
Dolphin needs an interface for handling Wii saves.

You can right click the game in the game list and choose "open save folder"

To convert bin saves see this topic

Yes, but it's not all that straight forward like other emulators, if you didn't have the ISO of the game readily available in Dolphin (deleted, moved, etc), retrieving the correct gamesave would be difficult.
I think it would be great if Dolphin could implement direct .bin support, all in all that would bring it closer to emulating the wii.
