Moved to Delfino Plaza because this really isn't related to Dolphin. Might want to ask people who know more about Cemu or something, but I'll leave this here.

Well, most of the dumping guides for Wii U I read ends in an extracted filesystem on your hard drive (e.g. similar to "Extract disc/partition" we have in Dolphin). Cemu also supports booting those extracted game images directly, so it might not be possible to replace files on a real Wii U but it's already possible in Cemu... An .rpx file is an executable, similar to .dol/.elf files for Dolphin. So, you should dig in the files from the disc rather than in the executable if you're looking for textures.

Obviously if you only have a .rpx file this is not enough, you need to dump your game from a Wii U with a software like WiiU Tile Dumper.
Then you will have a copy of all game files. I don't know where are located the textures, and if it's even possible yet to extract and convert them to png or dds.
From France with love.
