Right-click the game in your game list, click Properties, then go to the Filesystem tab.
You can also right-click the Disc (or, for Wii games, the game's main disc partition) and click "Extract all files..." if you want all the files on your desktop (or some other folder) to mess around with; this won't modify the original iso/gcz/wbfs file at all.
