UDP Wiimote shouldn't be enabled unless you have one of the few iOS/Android apps that work with it. (It's a fun feature, having your phone work as a Wii Remote, but it's not really useful for actual gameplay. The apps are all pretty rough and unpolished, too.)
If you're using an Emulated Wiimote, change the Extension (near the middle/right of the window) to Nunchuk or Classic (whichever you prefer – Classic is usually preferable, especially if you're using a typical gamepad) and click "Configure" under that to map the thing's buttons and sticks.
If you're still having trouble, provide screenshots of all the relevant windows. It's easier to just point out which switches to flip than to ask questions and write lengthy responses.
