A secondary screen for controls, cool, I have to try that sometime. About the Wiimote, have you asked to the guy that posted the video?

Yeah sorry, I don't frequent this place much anymore, just happened to see this thread.
here's the script, I hope you find it useful.
Code:
// Microsoft Flight Simulator X
// by apostacious
// This script makes use of the PPjoy virtual joystick driver.

// Wiimote movement
var.zmin = -30 // 1. Stand remote on IR end. Put the number next to RawZ here.
var.zmax = 23 // 2. Stand remote on expansion port. Put the number next to RawZ here.

var.xmin = -30 // 3. Lay remote on right side. Put the number next to RawX here.
var.xmax = 23 // 4. Lay remote on left side.   Put the number next to RawX here.

var.zoffset = -3 // This is shown as the X axis.
var.xoffset = -2 // This is shown as the Y axis.

var.z = Wiimote.RawForceZ
var.x = Wiimote.RawForceX
var.z = var.z + var.zoffset
var.x = var.x + var.xoffset
ppjoy.analog0 = MapRange(var.z, var.zmin, var.zmax, -2.5, 2.5)
ppjoy.analog1 = MapRange(var.x, var.xmin, var.xmax, -2.2, 2.2)

// Nuncuck movement
// Nunchuck joystick (I use it for camera movement but you can assign it to whatever you want)
ppjoy.analog4 = Wiimote.Nunchuk.JoyX
ppjoy.analog5 = Wiimote.Nunchuk.JoyY

var.z = Nunchuk.RawForceZ
var.x = Nunchuk.RawForceX
var.z = var.z + var.zoffset
var.x = var.x + var.xoffset

ppjoy.analog2 = MapRange(var.z, var.zmin, var.zmax, -0.8, 0.8)
ppjoy.analog3 = MapRange(var.x, var.xmin, var.xmax, -0.8, 0.8)

debug = 'WiiM X: ' + Wiimote.RawForceX + ' WiiM Z: ' + Wiimote.RawForceZ + 'NunC X: ' + Nunchuk.RawForceX + 'NunC Z: ' + Nunchuk.RawForceZ

// Dpad modifier controls
// Press & hold C button on the nunchuck to have alternative button mappings on the Dpad, buttons 1 and 2 and Nunchuck Z button
if Wiimote1.Nunchuk.CButton = true then
PPJoy.Digital12 = wiimote.Up
PPJoy.Digital13 = wiimote.Down
PPJoy.Digital14 = wiimote.Left
PPJoy.Digital15 = wiimote.Right
Key.F5 = Wiimote1.One
Key.F7 = Wiimote1.Two
key.Space = Wiimote1.Nunchuk.ZButton
endif

// Dpad modifier controls
// Original mappings
if Wiimote1.Nunchuk.CButton = false then
PPJoy.Digital0 = wiimote.Up
PPJoy.Digital1 = wiimote.Down
PPJoy.Digital2 = wiimote.Left
PPJoy.Digital3 = wiimote.Right

PPJoy.Digital4 = Wiimote.A
PPJoy.Digital5 = Wiimote.B
PPJoy.Digital6 = Wiimote.Minus
PPJoy.Digital7 = Wiimote.Plus
PPJoy.Digital8 = Wiimote.Home
PPJoy.Digital9 = wiimote.One
PPJoy.Digital10 = wiimote.Two
PPJoy.Digital11 = Wiimote1.Nunchuk.ZButton
endif
