This is a matter of opinion; are you playing the Wii through composite video only (i.e. the yellow cable)? I've obtained the game for the Wii and it plays back razor sharp on my 32" CRT through component video (i.e. the green, blue, and red cables). Connecting it to my 80" HDTV via component looks decent as well, although obviously not as sharp due to the fact that it has to upscale the 480p rendered image to 1080p. That said, I definitely wouldn't go so far as to call the picture "blurry" or "not very clear".
As General_Han_Solo stated, I'm not sure how you're playing a GameCube game on a Wii U as those consoles don't accept Gamecube game discs. Even if you've installed the 'Nintendont' homebrew Gamecube loader program on your Wii U and are loading games off an SD or HDD, the HDMI connection won't be much sharper than component as the games are still being rendered at 480p. As far as I know, the only way to get a higher rendered version of the game is through emulation.
At any rate, you should check out this video as it features a lot of Gamecube comparison videos between composite, s-video, component and HDMI. Jump ahead to the 20:29 mark if you want to see the discussion and results for the Wii U. You'll find the 480p picture quality between component and HDMI connections to be fairly similar. Yes, the HDMI has a slight advantage, but keep in mind those comparison videos are zoomed in to magnify any shortcomings. When playing the actual games, it would be very difficult to spot any real difference.
