Actually, what makes the game crash is vsync. Dual core only makes it reset, at least for me, and only once very early after launching the game. I am able to play in dual core for extended periods without problems after the initial crash.
Make sure you have dolphin's vsync disabled. You can still avoid screen tear if using Windows Aero Theme (or any that supports Windows Desktop Management or DWM). Also, use the latest build.
I don't think a lot of people have caught up to this.
