I'm using keyboard/mouse to play Super Mario Bros Wii. and Twilight Princess. In Mario Bros, I can't sprint, as that requires pressing 1 and left on the D-Pad. It won't recognize that I am pressing 1, no matter the configuration. I also tried mapping 1 and right to the same key, and it didn't work.

Same thing in Twilight Princess. Apparently pressing A/B, which is required to begin the game and get to your save files, does work, but I can't move while Z-targeting, nor can I do things like stab, which requires a forward tilt on the nunchuck and swinging the remote.

Any help or advice is greatly appreciated

Show a screenshot of your Wii remote configuration in Dolphin or upload WiimoteNew.ini.

New Super Mario Bros Wii's run button isn't "1" when you are playing with a Nunchuk. It's "Z" or "B".
Alternatively set the extension to "None" to remove the Nunchuk.

I can't remember how picky the stab detection in ZTP is but Nunchuk stick forward with Wii remote "Swing Forward" probably works if "Shake" doesn't.
You haven't shown your Nunchuk mappings. Show them if you need additional help.
