I've been messing around with multiple versions of Dolphin, and none of them are able to detect my adapter. For reference, the adapter I'm using is the official Nintendo one, and the versions of Dolphin I've tried are: 5.0, Ishiiruka LXP 2.0 v3, and Faster Melee 5.8.7. I've done the following in my attempts to fix the issue:

-Followed the official Dolphin setup guide, along with the controller setup guide on Anther's Ladder
-Reinstalled the WinUSB driver through Zadig multiple times, after uninstalling the corresponding driver
-Uninstalled and reinstalled vJoy
-Tried other USB ports

Despite all this, the adapter still does not work. I do know that neither the adapter nor my controller are faulty, since vJoy detects them just fine (although it seems that the L/R triggers are far too sensitive). What can I to fix this? I've had the adapter work with Dolphin on my previous PC as well, with this issue only becoming apparent after I built another one.

At least try the latest development version of Dolphin which you can find on the top of the Download page. And make sure that the adapter is in the correct (Wii) mode.

Just went ahead and tried the newest version (5.0-7539), still doesn't detect the adapter. Also, since the adapter is the Nintendo branded one, there is only one mode (Wii U).
