FPS drops to zero and the game freeze

If you really just want to play Rockband 3... play it on console? Most of the games that I can't play on emulator that I really want to play, I'll just load up on my console. Luckily with Dolphin, that amounts to almost none.

I would do it, but i have a Xbox 360 that i want to use to play the game.
