If don't know much about Dolphin, but if you are getting a LGA2011 stand away from Gigabyte. They have the worst LGA2011 board. Stick with Foxconn/ASUS, ASROCK or MSI. (no experience with EVGA)
My 3820 is OC'd to 4300 GHz (in bios it says 44). It can go up to 6.6GHz if you play with strap, but lose on power saving benefits when you touch strap you.
I have my 3820 running at 4.3GHz with a negative offset of 0.080 - stable for over a month now.
Previous build was a 3570k @ 5.0GHz with a positive offset of 0.075 max temps were around 60 degrees (30 degree delta), with the 3820 my delta is only 10 degrees
