I play lots of Nintendo racing games on Dolphin, but my experience is never great. For both GameCube and Wii, I have to control with either one of the analog sticks, or the d-pad. And, no matter what I do—it's hard to tell if you're pressing or not—I often miss controlling these, so I require multiple restarts to actually finish a race.
One thing I noticed on another emulator, PPSSPP, is that it has an option to control your desired controls with the phone's gyroscope. I can be the D-pad, the analog stick, L/R trigger buttons, or one the other action buttons. And when I use that, I have full control of the car, and I can win a lot more races without missing the controls than when I didn't.
