The reason that I'm doing this is so that I can use Memory Card B to get Nookington's in Animal Crossing. Openemu doesn't allow for advanced settings, and the game crashes regularly too, so I want to transfer my save to the latest stable version of dolphin. I am running dolphin 5.0-17995 on an old macbook with Big Sur 11.7.3 which can't be updated. I've ran into some issues trying to do this:

1. My ACGC file is an .iso. When I drag it into dolphin it plays, but when I try to add a directory to get it in my library it's always greyed out. I tried copying the path it follows in openemu, going from library>application support>dolphin but the dolphin folder (and the openemu folder) is not visible for some reason. I also tried just making a folder on the desktop and it's still greyed out.

2. Before I even discovered this issue I found that the memory file from openemu is .gci which I tried to convert to a .raw file, something I saw when I was googling solutions idk, either way I've tried pasting my save info into dolphin in the same manner in which it is in the dolphin core of openemu (the old files and converted file). It didn't do anything as when I drop the ACGC file into dolphin, the game starts up as though there's no save info.

I'm really at my wits end!

IDK what is going on with 1 (not a Mac user)

For 2 dolphin uses a folder full of gci files by default. In the user directory it will be something like GC/USA/Card A (depending on region and A/B)
If you want the a raw memory card you can move gci files to it with tools -> memory card manager.
