Question
How do I dump audio from a game without dumping all audio as one file?

It depends on the game, but it's likely in a format that's not easily useable.

So I did it once a couple years back and I can't remember how to do it again  I believe it's something to do with extracting the file from the file system in dolphin then somehow getting iTunes to read it then convert it to MP3 but I don't know how I got to that point it's been too long I was hoping someone here would tell me what I did

You probably want to look at Right Click game > Properties > Filesystem
