You may be able to do some local modifications to Dolphin's source code to allow you to double the IR widthways relative to heightways and then split the image across the two monitors right down the middle.

Just stretch the window out to both monitors, so one screen is on one monitor, and the other on the other. You may need to adjust the positions of your monitors, so they are vertical, but otherwise it should just work fine, assuming both monitors are the same resolution.

On windows 7, hotkeys were added for multi-monitor stuff. You can send a window to another screen by pressing Winkey + (left or right). Up and down is used for minimize and maximize, so I don't know if it will work with that.

I can maximise the window to span both screens (2 screens ontop of each other) which is fine, but the FOV in mariokart is altered in splitscreen because each player would normally occupy half of the screen. So when you stretch it, it looks rather odd

With 3 or 4 players it should look fine, if you can handle that

The problem is, the wii outputs at a 16:9, but two monitors ontop of one another are not 16:9 ^_^
