So I'm on holiday right now, putting up with limited time i have on a 2011 MacBook Pro (Core i5, 4GB RAM), so i've downloaded Dolphin and made good use of the "Perform online update" feature, and installed the latest EU system menu.

Issue is, whenever i load the system menu, it gets just past the little fading channels animation, then the entirety of dolphin exits, and shows a "Dolphin has quit unexpectedly" message.

Here's the macOS crash log which is about as much as I can get right now.
https://pastebin.com/A7F58BKb

I don't have any other games ripped yet that I can test, but I'm also working on that.
Download the latest development build of Dolphin and you'll be fine.

Well, you actually won't need the Wii Menu itself except for very specific reasons. So don't worry if it does not load. You can rip your ISOs and load directly from dolphin just like any other emulator.

Looks like a graphics driver bug. I don't suppose you have any updates available?

I believe the graphics drivers in OSX are shipped with the platform and not independently update-able, so if you're already running the latest version you might not have any luck....

No updates, latest version of macOS Sierra, may be entirely screwed in that regard.

It's the only way I have to access stuff like the Mii Channel and the likes of it, NUS downloader doesn't work on macOS and I'm not in a position where I can install Wine/mono easily so WADs are out of the question.

Seems like is a very specific reason...
