For 5.0 you'll probably want a i5 2500k (it's older but cooler ) and a water cooler.

Yep, watercooling is highly recommended (at least in my opinion) for everything above 4.5Ghz.

I've had three i5 2500K's and none of them have been reliably stable above 4.5GHz without insane amounts of voltage (which eventually became unstable again). maybe my luck just sucks. hoping for good overclocking from new Haswell chips coming in june, but not holding my breath due to VRM's being integrated...
also, ivy bridge based chips are about 5% more efficient at the same clocks, so... 4.3Ghz ivy = 4.5Ghz sandy and 4.8Ghz ivy = 5.0GHz sandy. but the caveat is higher temps because intel used TIM instead of solder between the heatspreader.
