Regarding Mario Kart Double Dash specifically, it should work correctly if you use a recent version of Dolphin with OpenGL. We don't support old versions.

We do not support Dolphin 0.14. That's back from the *alpha* builds, from like, 2013. That has an extremely early JIT, very early OpenGLES support, zero Vulkan support, and bugs galore!

As for that "purple screen in double dash" bug in particular, that issue is caused by hardware that lacks Dual Source Blending, a feature that game needs. Your very old Samsung tablet's Mali T830 GPU doesn't have it, hence the bug. However, the latest Dolphin builds have Dual Source Blending implemented on a shader for any device that supports "GL_EXT_shader_framebuffer_fetch" yet don't support Dual Source Blending, cause well, this situation is sadly a bit more common than we'd like. I'm pretty sure from what I googled that your device's GPU has shader framebuffer fetch, so the latest Dolphin builds could fix that for you.

Except you probably couldn't run the latest builds because the Galaxy Tab 10.1 2016 is known to have a 32-bit version of Android. So um, yea. I can't really say anything other than to try Dolphin on another device. The newest build with 32-bit support is 4.0-6674. Maybe you will have some luck with that. But that is nearly 5 years old now and you'd have to use the terrible ARMv7 JIT which was never actually completed because it was terrible, so, yea. If you try it though, we can't can't give you any support on it. Most of the bugs you'll encounter, like this one, are probably already fixed. You should really be trying Dolphin on a better device.

Anyway, we don't support older builds, and I just gave you the solution so, time for me to close this.
