I'm used to re-texturing N64 games by dumping pictures from the game and editing them etc. and I want to know if it's possible to do that with GC games (in my case Starfox Adventures.)

You can use the hi-res texture support for that kind of stuff... the textures needn't necessarily be hi-res.
