I connected a genuine Wii remote to a Bluetooth dongle on my computer. I'm not sure if this is relevant, but the Wii remote is receiving signal from an off brand USB powered Wii sensor bar. I can play games just fine, and the Wii remote works completely input wise. The problem I'm experiencing is that my Wii remote is hyper sensitive and very stutter-y, and the options to adjust it in any way are completely greyed out with no obvious way to access them.

If you mean that the cursor is stuttery, the problem could probably be that you are too close to the sensor bar. Nintendo recommends a distance of at least one meter.
