Using the wireless xbox one controller - it works with other emulators, so the controller is not the issue.

The A,B,X,Y + trigger buttons are recgonized and I had no issues, but trying to configure the C-stick and such using the analog sticks on my controller didn't do anything at all. I've hunted for answers on the internet but have yet to find anything (I'm sure there is this exact problem's solution right in front of me... Dodgy )

Yes, I've been fiddling around and it seems that the shoulder/bump buttons are working but the triggers are also not being recognized. Pressing the sticks registers but movement doesn't. The controller is new and Xbox (not an offbrand) and it's been working smoothly on everything else I've tried.

This sort of thing is possible though.

Turns out I am an idiot and I just needed to update my drivers.

In my defense Windows desensitizes you to update warnings....
