I've tried two controllers on Dolphin for OS X. A DualShock 3 and a Saitek Dual Analog controller. Both of these are detected by OS X and other apps that use controllers can detect these fine. Dolphin will input anything I configure from the Wiimote, however even if I add input to the Classic Controller's settings, no Classic Controller input is seen at all. For instance, the Wii System Menu does not move to the analog sticks as it would on a real console.
Furthermore, I tried a game that I know worked with the classic controller. For this example I chose Tetris Party. The tetromino is controlled by the cursor controlled by the emulated Wiimote rather than the D-pad on the emulated Classic Controller. This effect happens on both controllers, which work fine in other applications on OS X. I also tried a WAD of the game, which yielded the same results.
I'd like to use a Wiimote, but I don't have any Bluetooth adapter available right now and I am not intending to get a new Sensor Bar, so I'm stuck with the controllers I have.
