You only have to change these parts :
_i7 6700k -> i5 6600k (Or keep the i7 if you don't want to overclock the i5 )
_GTX 1060 -> GTX 1070 (GTX 1070 for 4k PC gaming but if Dolphin is the only one in your mind then GTX 1060 is fine )
_Remove the SLI Bridge option along with other useless option (like Tobi eyes tracking , HTC Vive...)
_Add a SSD (Solid State Drives) if you want Windows and PC games boot instantly
