So, I recently decided to try the development versions (5.0-8005, 5.0-8494 etc). However whenever I tried to launch any game (GC or Wii) the entire client would just crash.
When I try to run any Wii game (Super Mario Bros as an example) I get this specific error: https://imgur.com/a/h7ZDTlb

I did install the C++ Visual Studio 2017 file directly from the Dolphin Website and installed it.

Dolphin 5.0 works absolutely fine with all games.

My settings for Dolphin 5.0-8494: https://imgur.com/a/Oz3SNQE

Thanks for your help, keep up the great work.

Sounds like Dolphin is having issues writing to your files. Are you using a portable build perhaps in an area where Dolphin doesn't have permission to write to?

I have the development build on my desktop as a folder, and same goes for Dolphin 5.0 which works flawlessly.
However, both builds use the same 'Dolphin Emulator' folder located in my documents, do you reckon this could be the issue Dolphin is having?

Try adding a blank file called "portable.txt" next to the latest master Dolphin and try running it then. It could be that the newer settings aren't jiving well with 5.0's outdated stuff.

This partially worked. I could boot GameCube games, but not Wii games. When I try to boot a Wii game I get these three errors: https://imgur.com/a/WucmtFN. After those errors the Wii game would crash, but not the Dolphin Client itself.
Also anything that I configure is not saved the next time I boot up Dolphin.
Another weird glitch is that no backend is selected (https://imgur.com/a/fTH0fY4 ). If I leave it like this and boot a GameCube game it automatically selects OpenGL. Direct3D 11 does not work and causes the game to crash on either GameCube or Wii games, however Vulkan and OpenGL work but only one GameCube games.

I wonder if this could be a virus scanner/malware protection blocking Dolphin from making small writes to files. We had a hack working around that in 5.0 due to timings, but that is no longer present in the emulator because the timings are more accurate now.

Maybe. I'm only using Windows Defender though.

Something is seriously wrong with your OS then, and I'd start looking at underlying filesystem permission issues.

Or you have very nasty malware, but malware that intrusive would be noticed much earlier.

I doubt I have any malware on my system. But I do agree that it's most likely my OS that's the issue, not Dolphin. In saying this, the only solution I have in mind for this is to reset my computer and back up my files etc.
However, I am still able to run Dolphin 5.0 just fine as I mentioned in the original post; I wanted to try the development versions for increase in performance/features.
