You can basically copy all of the folders from your old Dolphin folder and put them in the one for the latest revision. Or just download the latest revision, and replace the .exe file in your old Dolphin folder. Either way is up to you.

Dolphin emulates a large majority of GC and Wii games, perfectly or with minor to moderate inaccuracies (a lot are fixable with the right settings, some aren't though). Only a handful of games are truly broken atm. A lot of Virtual Console games should work, but frankly we have far too few people reporting about them (at least judging from the wiki). Dolphin can also play WiiWare, and some homebrew I assume.

The Gamecube saves are located in:
[Dolphin Path]\User\GC\
Wii Saves:
[Dolphin Path]\User\Wii
You could copy the files/folders over to the new one.

EDIT: Probably a better idea to copy the entire User folder over.

then you will not have the last updated gameconfig .ini

when I upgrade I copy

[Dolphin Path]\User\GC\
[Dolphin Path]\User\Wii\
[Dolphin Path]\User\Load\Textures
[Dolphin Path]\User\Config\ <-- controller and emulator settings
P6T i7 920 @3.65Ghz-1.15v | Kingston 2x4GB 9-9-9-24 1600MHz | BeQuiet StraightPower E6-600W 48a/12v

There should be a special folder just for saves...
I guess copy over everything except the GameConfig folder
to avoid using old game configurations.
