I want to play dolphin emu on my Mac, I have to use the outdated 5.0 version from like 4 years ago? Is there any way to install the 64-bit Visual C++ redistributable for Visual Studio 2019 on my Mac? Or do I have to stay on the old version of dolphin.

That's a Windows-only problem. Go grab the latest 5.0 dev build and you should be good to go on macOS 10.15 (aside from the fact that Apple's OpenGL driver is terrible and dead, and you should probably use the Vulkan backend with uses MoltenVK for better performance)
