I was tempted to just close this thread without explanation due to how ridiculous the last paragraph is. Because I'm a kind, caring soul, I'll instead explain why what you're asking doesn't make sense.
Assuming Dolphin is emulating the game correctly, it's choosing to show the button prompts as Wiimote/Nunchuck because that's just how the game is designed. Making an "Emulated Classic Controller Mode" even if possible, wouldn't change that.
Now why is it impossible? Because the Classic Controller connects THROUGH the Wiimote to the Wii. If you want a Classic Controller Mode without the Wiimote, just start up your Wii, unplug the classic controller from your Wiimote and mash the buttons on the Classic Controller and see what happens. Not very successful, huh?

If you want to discuss a possible bug with Dolphin, please go to the support section. If you can get proof that Dolphin is differing from Console in this game in what it displays, then we'd happily accept a bug report and look into it. This is not the place for it.
