Does anyone have any experience using the Brook Controller Adapter?

Even though it shows as an option in the controllers menu as "Input/0/Wii U Gamecube Controller Adapter", it won't even allow me to configure the buttons to work.

Also, maybe this is a dumb question, but do both USBs need to be plugged in?

I would recommend using it as a wii u adapter (I assume it has some sort of switch):

Technically you only need one (which one on this adapter I do not know), second one is just extra power for rumble afaik

Thanks, but that's not working... The problem is that when I try to map the buttons Dolphin won't let me click on them.

You shouldn't be configuring buttons.

akatoosh- This is not the official gamecube controller adapter. I'm a little nervous to bypass SIP, do I need to do that? Does anyone know if this procedure even works with nonofficial adapters?

ExtremeDude2- Thanks so much for your help, what next steps can I take to try to figure out the problem?

If you're using a recent version of macOS, then yes, you need to do that if you want to use Dolphin's native support for Wii U GC adapters. But if you want to use the adapter in PC mode (with the slight disadvantages that come from that), you don't need to do it.

It works with all adapters that are compatible with Smash Bros for Wii U.
