Forgive any ignorance. I'll respond to all questions/tips.

I am currently running dolphin 5.0-12247. - I have a mayflash gamecube adapter and I have used zadig to setup the drivers. In controller settings on dolphin it says adapter detected, but no game recognizes the controller. I have tried a few different games in order to make sure it wasn't an issue with the game itself.

This happens when the controller is set to either Gamecube Adapter for Wii U, or Standard Controller.

The switch on the adapter is set to wii u.

I tried watching videos and doing my own research but all i could find were comments from people saying they had the same issue. Anything helps thanks

Which games did you test? Is the controller plugged into the leftmost port?

Try the latest dev (not beta) build? Changes to the GCAdapter code were made, but mayflash should've worked on both beta and latest dev...

If you have a wii u (smash 4 or something like nintendont) or a switch, can you check that the adapter and the first port is working there?

Do you have anything else that might try to pick up the adapter with that driver?

Try other drivers in zadig? (libusbK libusb, WinUSB)
