Bluetooth Passthrough can be very finicky depending of the adapter, perfect compatibility is only guaranteed with the BT Module from a real Wii.
From your log it seems Dolphin can successfully access the adapter, but it doesn't respond afterwards, making the emulated software hang in the process. Have you tried unplugging and replugging the BT adapter right before booting a game?
(also, do not add the BT module ID to the USB Passthrough list, it's not necessary and can cause problems)
