Hi, I'm trying to set up a Wiimote on my Mac, but in the official instructions, it talks about something called "Bluetooth Settings". I've searched the menus and Googled to no end, but it all keeps taking me back to the regular Bluetooth menu.

Where is this menu?

I believe you need to be using the latest development version of dolphin to use wiimotes on the latest MacOSX

That didn't really answer my question. I'm looking for the Bluetooth Settings menu on OS X, but I'm always linked to the standard Bluetooth Preferences menu.

In system preferences there should be a Bluetooth panel that you can click on to get to Bluetooth devices, that's the one you'll want to use.

If you're running OS X 10.13 you need to use the latest dev build of Dolphin because Apple changed some stuff in how their Bluetooth works, which Dolphin only fixed in a dev build.
If you're running OS X 10.10 - 10.12 you should use the latest dev build also because they have fixes for various other OS X peculiarities
