All the defaults.

The defaults are set to be the fastest possible for each game without breaking anything. Dolphin includes profiles for each game to not enable 'expensive' options for games that don't need them anyway.

You may be able to make small improvements depending on your hardware, such as AMD GPUs preferring the Vulkan graphics backend and Intel GPUs preferring Direct3d 11 graphics backend. It's also worth ensuring you're using the latest dev version of dolphin, as there's been multiple improvements since the 5.0 stable.

Some games may have specific options that you can change to improve performance, but they will always come with a trade off - anywhere from small graphical errors to game-breaking problems, but it's up to you to decide if they're worth it. But they are all game-specific, and if you have any issues the first thing people here will ask you to do is revert those back to the defaults. And there's a good chance that the games you play /don't/ have any options that help things that won't already be set by default.
