I can't change the 'disable speed limit' hotkey (TAB by default) to a Wiimote/Nunchuck button. I would like to change it to 1 or 2 on the wiimote, or maybe C on the nunchuck, for easier access. But the Hotkey settings window doesn't detect any inputs if I press a button on the wiimote or nunchuck.

Sorry, Dolphin doesn't support this. You can only do it with ugly workarounds such as using another program to map your Wii Remote to a virtual gamepad and then mapping that gamepad to an emulated Wii Remote in Dolphin.

That's because Dolphin doesn't support binding hotkeys to real wiimotes unless you configure that real wiimote with a generic controller driver somehow on your OS, and then use that in Emulated Wiimote mode.
