GSoC isn't really beginner-level though. There's Google Code-in for that but it's for high school students if I remember correctly.
The nice thing with open source is that you don't need this kind of "internship" programs. Just pick a project you like, find a bug that you think you can fix (hint: start by improving documentation?), submit a patch. Repeat. From there, get a good relationship with the development team, ask them for more tasks, etc.
