How would I apply that to Dolphin to use the classic controller ?

I have to right click it in the list, but after that I don't know where to go.

right click on the game -> properties -> Gecko Codes

I want to play donkey kong with a controller - and I need a code to be able to do that

But there is nowhere to put the code, unless you click configure and it might go in there ?

you have to manually put it in the .ini, I also believe if you click "download codes" it should be with those, make sure you have cheats enabled and a gekko plugged in the one of the GC memory card slots.

Use codelist and not .gct file
