I just found out about Dolphin emulator and wanted to get a controller to play with it. After some research, I decided to get a 3rd party controller (and maybe test my luck lol), but I would like to read some experiences or feedback about using a knock-off Wiimote.

For info, I would get a Ugreen 5.0 Bluetooth adapter(which was recommended in Bluetooth Passthrough tutorial) and this controller with Motion+ inside.

I don't personally have a knock off Wiimote, but a friend of mine does. It actually looks very similar to that one, I wouldn't be surprised if it was identical. He has this one:

As far as I know Bluetooth Passthrough is required for knock off Wiimotes, so it's good you're already going that path. Funny enough he also has that exact Bluetooth adapter. So anyways, I've used his before and it seems to work just fine really. Seemed to play anything including motion plus games and it did an ok job at it.

With that being said, I would still try and find a used real Wiimote. Although his works fine it certainly doesn't feel as a good a real Wiimote. The buttons were stiff, the dpad wasn't great which I like using in a few games like Donkey Kong Country Returns and Castlevania Rebirth to name a few. I feel like you should be able to find an endless number of Wiimotes at local pawn shops, I know I can anyways where I live. Although if you couldn't find anything than the knockoff one that my friend has does still get the job done

Just FYI, we have a test result for the older Ugreen adapter, which is Bluetooth 4.0 only. The link you posted is of a different model, with Bluetooth 5.0, which we don't have test results yet...
