Just copy out the GC & Wii folder out and then uninstall and reinstall dolphin and paste it back, i'm guessing one of the isos is might be corruped or something that it makes dolphin unresponsive when trying to read it, you can choose as many folders to search for iso as possible, try selecting them each one by one and make sure they show up in dolphin one at a time till you can find the one that actually makes it unresponsive
Also try a different version, it might be a problem with that version
