I've done some searching around google and here, but I can't seem to find a (recent) post. Can 3d models be ripped from GC/Wii games using Dolphin?

Technically you can, but you will need more hack tools. Dolphin can't do the job alone.

You can open filesystem in disc image (.iso or .gcm) using Dolphin and save certain files from disc image to desktop.

For Super Smash Bros. Brawl model ripping, it's possible with BrawlBox and DasDonkey Vertex Box. There should be more hack tools available for other games as well.

The infrastructure is basically there, you'd just have to serialize the vertex data and stuff to a file (like .x, .3ds or whatever).
We also have an issue for that on googlecode, but noone has yet started to work on it.

You could try 3d ripper dx. It works, but the models are really squished on one axis. (Fix?)
